Mezcal at Montage Los Cabos
Mezcal is Mexican fine dining inside Montage Los Cabos (Transpeninsular km 12.5, Bahía Santa María) with a Pacific-view patio. Michelin says Mexican wines and a tasting inspired by regional mercados sit beside à la carte. Inspectors cite Xochimilco squash-flower salad with black-bean purée, plantain mollete filled with jocoque over mole, lamb birria with onion-cilantro foam, and prickly-pear sorbet in the fruit. Selected 2026 — not a star.
